As the festival of kite known as Uttarayan is nearing, in almost all Gujarati home they start making delicious sweet from jaggery known as Chikki. These crispy sweet treat is usually made from jaggery or sugar and is mixed with sesame seed / peanuts / dry fruits etc. Here is how you can make Til / Sesame chikki at home.
INGREDIENTS
100 Grams of White Sesame Seeds (Safed Tal)
70 Grams of grated Jaggery (Gaud)
1 teaspoon of Pure Ghee (Desi Ghee)
1 teaspoon of Water
PROCEDURE
Wet the sesame seeds in the running water and let it dry by spreading them on a kitchen towel. In the non stick pan dry roast the sesame seeds until they starts fluttering. This way chikki will become soft.
Remove the sesame seeds in a plate and let them cool. Now finely grate jaggery using knife and keep aside. Grease the rolling board and rolling pin with required amount of ghee.
Now heat the pan, take grated jaggery and add a teaspoon of water and stir it continuously while the jaggery is melting. Once jaggery melts it will start forming a lot of bubbles. Stir continuously without stopping. After a while the bubbles will disappear and jaggery will form soft paste. Now it's time to add roasted sesame seeds to melted jaggery. Turn off the gas and mix sesam seeds in hot jaggery mixture. Mix well. Now immediately put this mixture on rolling board and with the help of rolling pin make a flat roti shape about 5mm thick. Using a knife make horizontal and vertical cut approx 2 inch apart while the spread is still hot, or just instead of rolling flat you can also make balls from it to make Chiki Laddus. Your chiki is ready, once cooled separate each pieces and store them in an air tight container.
