Surti Papdi / Val Papadi / Flat Green Beans nu Shaak is very delicious and popular Gujarati vegetable. It is very easy and can be quickly made. Normally Surti papdi is seasonal vegetable and available mostly during winter season.
COOK TIME 30 minutes
INGREDIENTS
200 gm Flat Green Beans (Surti Papdi or Val Papadi)
1 teaspoon Red chili powder (Lal Marchu)
¼ teaspoon turmeric powder (Haldar)
1 tsp Ginger chili paste (Adu Marcha ni Chutney)
1 teaspoon Cumin Powder (Jeeru)
1 teaspoon Coariander Powder (Dhana Jeeru)
1 tbsp Oil (Tel)
Salt to taste
Water as required
PROCEDURE
Wash and cut papdi and boil it in water by adding salt. Boil till it becomes soft and then drain water from it. Now heat oil in a pan at slow flame. Once oil is heated up add ginger and chili paste and saute it. Add turmeric powder and papdi in it. Stir and cook for a minute. Now mix red chili powder, cumin and coriander powder and stir it properly. Cook for a minute and remove it from the flame. Serve hot with roti aur bhakari.
