Shrikhand – puri is one of the most popular sweet items in Gujarat, it is a delicious sweet that can be served alone to satisfy your sweet desire or with the spicy food.
INGREDIENTS
- 3 cups of Curd (Moru Dahi)
- 1/2 cup of Powdered Sugar (add more depending on
sweetness required)
- 1/2 teaspoon Cardamom Powder (elaichi powder)
- 10-15 Almonds and Cashew nuts (cut into small
pieces)
- 7-8 Strands of Saffron (Kesar)

PROCEDURE
Spread clean muslin cloth on a big plate and place plain curd in the center. Wrap it tightly from all sides and tie muslin cloth firmly. After that hang curd in a refrigerator for around 4-5 hours and see that all water from curd is drained off.

In another small cupp dissolve 7-8 Strands of Saffron in 1-tablespoon of warm milk and mix well. After 4-5 hours, remove curd from muslin cloth and transfer thick strained curd to the bowl. Add sugar and cardamom powder and mix properly using a stirrer and stir until curd becomes smooth. Now add pieces of almonds, cashew nuts, saffron stands dissolved in milk and mix well with stirrer. Refrigerate for at 2-3 hour before serving chilled. You can also add fresh fruits pieces like apple, grapes, pineapple, and mango to make a creamy fruit dessert.
NOTE
Curd taken for Shrikhand preparation should not be sour otherwise shrikhand will turn sour in taste.
