Dudhpaak is also a popular sweet item in Gujarat. Dudhpaak is a semi-thick mithai and delicious sweet that can be served hot or chilled.
INGREDIENTS
1 litre Milk (Dudh)
1 cup of Rice (Chokha)
300 grams of Sugar (Khand)
5 nos of Cardamom (Elaichi)
10 nos of Charoli seeds (Charoli)
7-8 Stands of Saffron (Kesar)
10 nos of Almonds, cut into slices(Badam)
10 Pieces of Pistachios, cut into slices (Pista)
10 Pieces of Raisins (Suki Draksh)
PROCESS
1) Wash the rice, drain and add the ghee and mix well and keep aside.
2) Cut almonds and pista into thin slices and dissolve the saffron in tablespoon of warm milk and keep aside.
3) Boil the milk in a pan, stirring constantly. Now add the rice to boiling milk and let it cook till the rice is cooked.
4) Add almond slices, pista slices, charoli seeds, saffron dissolved in warm milk, sugar and raisins and simmer for 10-15 minutes until milk becomes slightly thick, stirring continuously.
5) Sprinkle cardamom seeds in the hot milk.
6) Dudhpak can be served hot or refrigerate for at 2-3 hour before serving chilled.
