Kankoda / Spine Gourd is a seasonal vegetable and famous gujarati recipe. Kankoda is very healthy vegetable due to its fiber and vitamins contents & good for cough, fever, and also controls the sugar level too.

COOK TIME 15 Minutes
INGREDIENTS
4-5 Nos. of Spine Gourd (Kankoda)
¼ teaspoon of Asafoetida (Hing)
1 teaspoon of Mustard Seeds (Rai)
1 teaspoon of Red Chilli Powder (Lal Marchu)
3 teaspoon of Oil (Tel)
1 teaspoon of Cummin Seeds (Jeeru)
¼ teaspoon of Turmeric Powder (Haldar)
Salt as per taste
PROCEDURE
Wash Kankoda in running water properly and then cut into thin slices. Now heat oil in the pan and add mustard seeds. When mustard seeds starts crackle, add cumin seeds and then asafoetida. Add kankoda slices to it and mix it well. Cover it with lid and let it cook on medium heat until kankoda are tender. Stir every few minutes to cook evenly and prevent burning. After kankoda are almost cooked add red chilli powder, turmeric powder, salt and mix well and let it cook for another 2-3 minutes on low flame. Once ready turn of flame and serve hot with bhakri or roti.
