Raw mango chunda you will always find in every Gujarati house. Today I am like to share mango chunda recipe.
INGREDIENTS
4 Nos. of Raw Mangoes (Grated)
2 tbsp salt (or as per taste)
3 Cups Sugar
2 teaspoon Red Chilli Powder
1 teaspoon Finely Crushed Cumin Seeds
There are two ways to prepare Chundo
METHOD-I
My dadi usually make Chundo in traditional way. She adds everything in a big vessel and covers it with muslin cloth. She put this in sunlight and heat from sun will melt the sugar gradually. This is how thick sugar syrup is made. And this process might take up to 10 to 12 days depending on temperature.
METHOD-II
Its a Instant method in which sugar is melted to syrup on stove top and rest of the process remains almost same.

Take grated mango in the bowl and add salt and sugar and mix well and let it sit for 20-30 minutes covered. Now the sugar get thickened syrup it will be little harder to stir it. You need to stir it for 10 more minutes till sugar get completely dissolved and all ingredients get properly mixed with grated mango. |
Then put the pan on low heat and stir continuously and heat till all sugar get dissolve properly and you get nice sugar syrup. You will see few bubbles on top, at that time stop cooking. Remove it from heat. Do not overcook the mango and sugar mixture otherwise it will crystallized.
Once mixture cool completely and sugar syrup will get little thickened, now add red chili powder and finely crushed cumin seeds and mix throughly. Store it in a ceramic or glass jar to preserved it for whole year.
